Bison Ribeye & NY Strip cuts
The bison ribeye and NY strip cuts I got were top-notch. They showed up quick and still frozen solid, so they were super fresh. Bison meat is easy to overcook, so you have to watch it carefully, but these cuts turned out great! We made some bison tataki with one part and just grilled the rest perfectly, then served them with roasted carrots and potatoes. I seasoned them with a dry rub made of thyme, oregano, olive oil, and black pepper, and only added salt after cooking to keep the meat juicy. The flavor was amazing!
